Today on Fox 10


What does it look like from where I cook at the Fox 10 Phoenix studio? It's actually a pretty cool view.







Today on Fox 10 Phoenix Arizona Morning show at 9:45 I made some fast, easy and healthy after school snacks for everyone to enjoy! I think I'm more excited about this piece than I have ever been. I got to meet Alexis Vance, even though she has been there for quite some time, she was very ill with her last pregnancy and I didn't have the chance to meet her personally until today. She's just as sweet in person as she seems on TV. Special thanks to the producer Elizabeth Soroka for the chance to be on again and for thinking of asking me. It's always a pleasure to work with the whole crew down there. Thanks Fox!



Mini Sandwich Kabobs (not pictured)

Whole wheat bread, cut into cube squares (overnight started bread or contact me for personal Bread Classes)
Assorted organic low fat cheese cubes sprinkled lightly with Romantic Italian Seasoning
Chicken breasts cooked and cut into cubes (marinated in fat free-sugar free red wine vinaigrette found here: 4 Basic Pasta Salads and One dressing )
Grape tomatoes
Romaine lettuce
(optional)
Pickles (I used Peach Bread and Butter Pickles)
Olives (optional)

Slide the ingredients onto skewers and set out a side of mayo or mustard for dipping!

Chef Tess' Peanut butter-banana Yum Balls (AKA Energy Bites)
NOTE: If you have children with peanut allergies, it is okay to use peanut free almond butter or soy butter in place of the peanut butter!
1 small banana
2-3 drops of liquid stevia or 2T honey
1/2 cup chunky peanut butter ( all natural enriched with flax and wheat germ)
1/2 cup wheat germ OR 1/4 cup soy protein powder (I prefer the protein powder)
1 tsp vanilla
Finely chopped peanuts, mini-chocolate chips, or non- sweetened shredded coconut for coating

In a medium bowl, mash together the banana and the peanut butter. Stir in the protein powder. Roll individual tablespoons of the mixture into balls, and then roll the balls in the chopped peanuts, mini chocolate chips, or coconut. Chill until firm. (Make these in bulk!)
